Hide Shop Items from Select Usergroups

On a site I'm currently developing, different usergroups are planned to be only able to buy certain items within the shop and shouldn't be able to see or buy others.

I was wondering if there could possibly be a way to filter which usergeroups can see which items, or at least which item categories they can see?

Using variables outside of HTML Templates?

So, I'm planning on having an 'online list' in a sidebar and I've tried using both the curly bracket variable and the html template variable but neither seem to be work for me.
The former stays the same as the input and the latter shows nothing.

Is this possible at all through any other way?
I just want to use variables within the board wrapper.

currently trying to get my fields to show up as their user inputted values. as you can see, they currently don't and if i use the miniprofile coding in them they reset to the default style?
